Ingredients:

1 Baking Potato –
(small potato – 1 3/4 inches to 2 1/2 inches in diameter = 110 calories, 0 g fat, 24 g carb, 3 g protein)
(medium potato – 3 inches to 4 1/4 inches in diameter = 140 calories, 0g fat, 31g carb, 4g protein)


Directions:

Leaving skin on, clean potato thoroughly. Stab potato with a sharp knife 6 to 8 times to allow steam to release as potato bakes. Bake at 425° for 30 to 45 minutes. Top with one of the topping options below.

Toppings

Topping 1: 100 calories, 8g fat, 4g carb, 8g protein
1/4 cup Salsa
2 oz shredded Pepper Jack cheese
1 tablespoon sliced green onions

Topping 2: 100 calories, 8g fat, 2g carb, 5g protein
2 tablespoons reduced fat sour cream
1 tablespoon reduced fat cheddar cheese
1 strip cooked turkey bacon, crumbled
1 tablespoon sliced green onion

1/3 cup rotisserie chicken breast – skin removed

1/4 cup canned kidney beans – chili style
2 tablespoons chopped red onions
2 tablespoons reduced fat cheddar cheese

Topping 5: 100 calories, 6g fat, 7g carb, 6g protein
1 cup cooked, chopped broccoli
2 tablespoons Parmesan cheese
1/4 teaspoon crushed red pepper (optional)

Topping 6: 100 calories, 6g fat, 5g carb, 9g protein
1/4 cup reduced fat sour cream
2 tablespoons diced ham
2 tablespoons chopped chives
