- 2 15 oz. Cans Cannellini, Navy, Northern White Beans, drained and rinsed
- ½ Cup Red or Green Bell Pepper, diced
- ½ Cup Tomatoes, diced or Grape Tomatoes, halved
- ½ Cup Red Onion, chopped
- ½ Cup Fresh Parsley, chopped
- 4 Tbsp Olive Oil
- 4 Tbsp White Vinegar
- 2 tsp Minced Garlic
- 2 Tbsp Brown Sugar
- 1 tsp Thyme
- Sea Salt and Black Pepper, to taste
- In medium-sized bowl, combine all salad and dressing ingredients.
- Stir to combine.
- Chill before serving.
