An easy summer dip recipe loaded with beans, veggies, and a little kick
Cowboy Caviar is a simple dip that is sure to be a hit at any get-together. This dish is perfect for parties, barbecues, dinners, or just snacking on. In just a few simple steps, you can create a flavorful, fresh summer dip. Speaking from experience, the hardest part of making Cowboy Caviar is chopping up the veggies. After that, everything is just mixing and enjoying! In fact, if you bring this dip to a gathering once, you will certainly be asked to keep making it.
Ingredients:
- 3 diced Roma tomatoes
- 1/3 cup diced red onion
- 1 can canned black beans (rinsed and drained)
- 1 can canned black-eyed peas (rinsed and drained)
- 1 diced bell pepper
- 1 diced jalapeño (seeds removed)
- 1 ½ cup corn kernels (thawed if frozen)
- 1/3 cup chopped cilantro
- Tortilla chips (for serving)

Dressing:
- 1/3 cup olive oil
- 2 tablespoons red wine vinegar
- 2 tablespoons lime juice

- 1 teaspoon salt
- 1 teaspoon black pepper
- ¼ teaspoon garlic salt
How to Make Cowboy Caviar
First, combine tomatoes, red onion, black beans, black-eyed peas, bell pepper, jalapeño, corn, and cilantro in a bowl. Mix well to ensure all ingredients are mixed well.
Next, in a separate bowl, mix olive oil, red wine vinegar, lime juice, sugar, salt, pepper, and garlic salt.
Then pour the dressing over the other ingredients and stir well, ensuring everything is coated.
Finally, keep the dip refrigerated. If you are not serving it immediately, be sure to stir well before serving.
Enjoy Your Cowboy Caviar
And that’s it! Scoop the Cowboy Caviar onto a tortilla chip and savor a bite packed with freshness, saltiness, and a touch of heat. Some Cowboy Caviar fans eat this dip straight from the container with a spoon, too. The crispness of the vegetables tastes like summer in a bowl. I am not too ashamed to admit that I have finished nearly an entire batch of this by myself. It’s almost too good to share.
For the best results, I recommend dicing your veggies very small to ensure you get some of every ingredient in each bite. Additionally, using a bigger bowl than you think you need is always a good measure, too. You want to make sure you have plenty of room to mix up all of the deliciousness!
Kick off the summer with Cowboy Caviar! Enjoy this tasty dip by the pool, at a picnic, on the beach, or just on the couch. No matter the occasion, each bite is delectable.
