Easy Cod Recipe For Dinner Tonight; Healthy Living Done Right

My husband loves seafood, but I am not quite the connoisseur of fish. However, I came across this cod recipe a few years back, and I love this dish. It is effortless yet looks high-end. The best part? It’s super easy to make, and the lemon-caper sauce adds the perfect touch of zest!

Here’s the recipe I followed, which I found on PaleoGrubs. The almond flour gives the cod a nice, crispy coating, while the capers and lemon juice give the dish a bright, tangy finish. Pair it with a salad or roasted broccoli for a healthy, delicious meal.

Ingredients

  • 1 lb. cod fillets
  • 1/3 cup almond flour
  • 1/2 tsp salt
  • 2-3 tbsp extra virgin olive oil
  • 2 tbsp grapeseed oil, divided
  • 3/4 cup chicken stock
  • 3 tbsp lemon juice
  • 1/4 cup capers, drained
  • 2 tbsp fresh parsley, chopped

Instructions:

  1. In a shallow bowl, mix the almond flour and salt.
  2. Rinse the cod fillets and pat them dry with a paper towel. Coat the fish in the almond flour mixture.
  3. Heat 2-3 tbsp of olive oil and 1 tbsp of grapeseed oil in a large skillet over medium-high heat.
  4. Add the cod to the pan in batches and cook for 2-3 minutes on each side until golden brown. Then, transfer the fish to a plate and set aside.
  5. Add chicken stock, lemon juice, and capers in the same skillet. Scrape up any bits from the bottom of the pan and let it simmer until the sauce reduces by half.
  6. Turn off the heat and stir in the remaining tablespoon of grapeseed oil.
  7. Serve the cod on plates, drizzling it with the lemon-caper sauce and topping it with fresh parsley.

This Cod recipe is perfect for a quick and healthy dinner. It’s a go-to in my kitchen when I’m in the mood for seafood—or every week if my hubby plans the meals.
