Ingredients

  • 2/3 cup soft shortening
  • 1/2 cup peanut butter
  • 1/2 cup sugar
  • 1/2 cup brown sugar, packed
  • 1 egg
  • 1/2 tsp vanilla
  • 1 1/4 cups self-rising flour
    (if using all-purpose, add 1/2 tsp baking soda & 1/2 tsp salt)
  • 1 package semi-sweet chocolate chips

Instructions

  1. Preheat oven to 350°F.
  2. Mix shortening, peanut butter, sugars, egg, and vanilla until well combined.
  3. Sift flour (and soda/salt if needed), then stir into the wet mixture.
  4. Fold in chocolate chips.
  5. Drop spoonfuls onto an ungreased baking sheet.
  6. Bake 8–12 minutes, until edges are lightly golden.
  7. Cool slightly before moving to a wire rack—if they last that long.
