There is something special about starting your morning with a warm slice of banana bread. This easy Banana Bread with peanut butter is my favorite recipe. It is tender, full of flavor, and always hits the spot. We made it on Thanksgiving morning this year, and it paired perfectly with hot coffee and the holiday parades playing in the background. The whole house smelled amazing.

However, it took some doing. It is one of my favorites, but I haven’t made it in a while. I spent hours searching online for the recipe. For the life of me, I couldn’t remember where I originally found it. After my search went unrewarded, I dug through some old recipes I had printed over the years, yet never organized.

Alas, I finally found the recipe. I first made it in 2013, but the only name on the recipe was myrecipes.com, which no longer carries it. Thus, I can not take credit for this recipe or give proper credit, but this should not stop you from making it. 

Even better, this recipe mixes together quickly. The yogurt keeps it moist, the peanut butter adds a little richness, and the bananas give it the perfect sweetness. The glaze on top brings everything together with a light, creamy finish. This is one of those recipes you will want to keep on hand for weekends, holidays, or any day you need something warm from the oven.


Easy Peanut Butter Banana Bread

Ingredients

Bread

  • 1 1/2 cups mashed ripe banana
  • 1/3 cup plain fat-free yogurt
  • 1/3 cup creamy peanut butter
  • 3 tablespoons butter, melted
  • 2 large eggs
  • 1/2 cup granulated sugar
  • 1/2 cup packed brown sugar
  • 6 3/4 ounces all-purpose flour (about 1 1/2 cups)
  • 1/4 cup ground flaxseed
  • 3/4 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground cinnamon
  • 1/8 teaspoon ground allspice
  • 2 tablespoons chopped dry-roasted peanuts
  • Cooking spray

Glaze

  • 1/3 cup powdered sugar
  • 1 tablespoon 1% milk
  • 1 tablespoon creamy peanut butter

Instructions

  1. Preheat your oven to 350°F.
  2. In a large bowl, add the mashed banana, yogurt, peanut butter, melted butter, and eggs. Mix at medium speed until smooth. Add the granulated sugar and brown sugar. Mix again until blended.
  3. Spoon the flour into measuring cups and level it with a knife. In another bowl, combine the flour, flaxseed, baking soda, salt, cinnamon, and allspice. Add the dry ingredients to the banana mixture. Stir gently until blended. Fold in the chopped peanuts.
  4. Coat a 9×5-inch loaf pan with cooking spray. Pour in the batter. Bake for about 1 hour and 5 minutes, or until a wooden pick inserted in the center comes out clean.
  5. Cool the bread in the pan for 10 minutes. Then remove it and transfer to a wire rack to cool completely.
  6. Whisk together the powdered sugar, milk, and peanut butter until smooth. Drizzle the glaze over the cooled loaf.
