There’s something about that warm, cozy taste that feels right anytime, whether it’s a brisk autumn morning or a cool spring evening. One of my favorite ways to indulge in this classic pairing is through pumpkin spice waffles. I love to make large batches and freeze them for a quick, easy breakfast—just pop them in the toaster and enjoy!

Making Waffles with a Stovetop Waffle Maker
Ingredients:
- 1 cup canned pumpkin
- 3/4 cup maple syrup
- 1/3 cup neutral oil (I prefer avocado oil)
- 2 large eggs, room temperature
- 1/4 cup milk or buttermilk
- 2 teaspoons vanilla extract
- 1.5 cups all-purpose flour
- 1 teaspoon cinnamon
- 3/4 teaspoon salt
- 1/2 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1 1/2 teaspoons pumpkin pie spice (a mix of cinnamon, ginger, cloves, and nutmeg)
- Butter for topping
For the Apple Cider Syrup:
- 1/2 cup maple syrup
- 1/2 cup apple cider
How to Make Pumpkin Spice Waffles
Making the Waffle Batter:
- Preheat your cast iron waffle iron on the stovetop.
- In a large mixing bowl, whisk together all the wet ingredients: canned pumpkin, maple syrup, avocado oil, eggs, milk, and vanilla extract.
- In a separate bowl, combine all the dry ingredients: flour, cinnamon, salt, baking powder, baking soda, and pumpkin pie spice.
- Gradually add the dry ingredients to the wet mixture, stirring until just combined. Be careful not to overmix.
- Grease the preheated cast iron waffle iron with butter or avocado oil spray.
- Pour the waffle batter onto the center of the waffle iron.
- Close the waffle iron and cook until the waffles are golden brown and fully cooked.
- Carefully remove the waffles from the waffle iron and repeat the process with the remaining batter.
Making the Apple Cider Syrup:
- In a small saucepan, combine the maple syrup and apple cider.
- Bring the mixture to a simmer over medium heat.
- Reduce the heat to low and let the syrup simmer for about 10 minutes, or until it has thickened slightly.
- Remove the syrup from the heat and allow it to cool slightly before serving.
