Pumpkin and spice aren’t just for fall—they’re a flavor combination I enjoy year-round. There’s something about that warm, cozy taste that feels right anytime, whether it’s a brisk autumn morning or a cool spring evening. One of my favorite ways to indulge in this classic pairing is through pumpkin spice waffles. I love to make large batches and freeze them for a quick, easy breakfast—just pop them in the toaster and enjoy!

Making Waffles with a Stovetop Waffle Maker

Ingredients:

  • 1 cup canned pumpkin
  • 3/4 cup maple syrup
  • 1/3 cup neutral oil (I prefer avocado oil)
  • 2 large eggs, room temperature
  • 1/4 cup milk or buttermilk
  • 2 teaspoons vanilla extract
  • 1.5 cups all-purpose flour
  • 1 teaspoon cinnamon
  • 3/4 teaspoon salt
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1 1/2 teaspoons pumpkin pie spice (a mix of cinnamon, ginger, cloves, and nutmeg)
  • Butter for topping

For the Apple Cider Syrup:

  • 1/2 cup maple syrup
  • 1/2 cup apple cider

How to Make Pumpkin Spice Waffles

Making the Waffle Batter:

  1. Preheat your cast iron waffle iron on the stovetop.
  2. In a large mixing bowl, whisk together all the wet ingredients: canned pumpkin, maple syrup, avocado oil, eggs, milk, and vanilla extract.
  3. In a separate bowl, combine all the dry ingredients: flour, cinnamon, salt, baking powder, baking soda, and pumpkin pie spice.
  4. Gradually add the dry ingredients to the wet mixture, stirring until just combined. Be careful not to overmix.
  5. Grease the preheated cast iron waffle iron with butter or avocado oil spray.
  6. Pour the waffle batter onto the center of the waffle iron.
  7. Close the waffle iron and cook until the waffles are golden brown and fully cooked.
  8. Carefully remove the waffles from the waffle iron and repeat the process with the remaining batter.

Making the Apple Cider Syrup:

  1. In a small saucepan, combine the maple syrup and apple cider.
  2. Bring the mixture to a simmer over medium heat.
  3. Reduce the heat to low and let the syrup simmer for about 10 minutes, or until it has thickened slightly.
  4. Remove the syrup from the heat and allow it to cool slightly before serving.
