Making the Pastry Crust:
- 2 3/4 Cups All-Purpose Flour
- 3 Tbsp Sugar
- 1 Egg
- 4 Tbsp Ice Water
- 3/4 tsp Sea Salt
- 1 Cup Shortening
- 1 tsp Vinegar
Adding the Peanut Butter Crumbs:
- 3 Cups Powdered Sugar
- 1 1/2 Cups Creamy Peanut Butter
For the Vanilla Pie Filling:
- 1 1/3 Cups Instant Vanilla Pudding Mix
- 4 Cups Cold Milk
Topping:
- 1 – 8 oz tub Whipped Topping
Making this Perfect Peanut Butter Pie
Pastry Crust:

- Then, cut the shortening into the flour until you have pea-sized crumbs. This part is so satisfying—I love seeing the dough come together!
- Whisk the egg, vinegar, and ice water in a separate bowl. Then, pour this mixture into the crumbs and gently mix until the dough starts to form. Remember, don’t knead it!
- Once your dough is ready, flatten it into a disk and pop it in the fridge for about 30 minutes. This gives you enough time to get excited about what’s coming next.
