INGREDIENTS:
1 package fat-free, sugar-free vanlla pudding
2 cups skim milk
Half of an 8 oz. container fat-free frozen whipped topping, thawed
1 ½ cups chopped fresh strawberries
12 fat-free vanilla wafer cookies, crumbled
DIRECTIONS:
In a large bowl, combine milk with pudding mix, stirring for 5 minutes. Refrigerate for 30 minutes. Meanwhile, sprinkle 1 teaspoon of cookie crumbles in the bottom of each serving cup.
Remove pudding from refrigerator; stir in whipped topping; stir in strawberries and remaining cookie crumbles. Divide evenly into 8 six-ounce size serving cups and place in freezer.
Remove cups from freezer 30 minutes before serving. If desired, decorate tops with a mint leaf and 2 strawberry slices.
