IRISH SODA BREAD

Ingredients:

1½ cups + 1 tablespoon all-purpose flour

½ cup whole wheat flour

2 teaspoons grated lemon zest

1 teaspoon baking soda

½ teaspoon salt

1 cup low-fat buttermilk

3 tablespoons honey

½ cup currents, raisins or craisins (optional)

 

Directions:

 

Preheat oven to 350° F; spray a baking sheet with nonstick cooking spray.

In large bowl, combine the flours, lemon zest, baking soda, salt and currents, raisins or craisins (if desired). In small bowl, combine the buttermilk and honey. Pour over the flour mixture; stir just until the flour disappears – do not overmix.

Lightly sprinkle a work surface with flour then turn out the dough. Flour hands and knead the dough lightly 7 to 8 times. Form dough into a 7-inch round loaf; place on baking sheet. With a sharp knife, slash an X on the top of the loaf.

Bake in the upper third of the oven until browned and toothpick inserted in the center comes out clean, 40 – 45 minutes and loaf sounds hollow when tapped on top. If the bread is becoming too brown before it is finished baking, tent the bread with aluminum foil.

Remove from baking sheet and cool completely on a rack.
