Mini Omelets


Ingredients:

½ cup egg substitute

2 slices Canadian bacon, finely diced

(can substitute 4 slices cooked turkey bacon

or 2 cooked turkey sausage patties)

½ cup finely shredded cheddar cheese

non-stick cooking spray

Directions:

Preheat oven to 350 degrees.

Lightly spray a mini 24-cup muffin tin with cooking spray. Place a pinch of diced Canadian bacon in bottom of each muffin cup; add a pinch of cheese on top. Pour egg substitute to just below top of each muffin cup. Bake for 8 – 10 minutes or until egg is set. Loosen muffins with spatula and place on serving dish. Serve immediately.
