Orange Poppy Seed Dressing


4 teaspoons cornstarch

6 tablespoons cold water

1 1/3 cups orange juice

1/4 cup white vinegar

4 teaspoons honey Dijon mustard

4 teaspoons honey

1 1/4 teaspoons poppy seeds

salt and pepper to taste


In a small saucepan combine cornstarch and cold water, stirring until smooth. On medium to medium/high heat, stir in orange juice, white vinegar, honey Dijon mustard and honey. Bring mixture to a boil; cook and stir for 1 minute or until thickened. Stir in poppy seeds; add salt and pepper to taste. Refrigerate until dressing is chilled. This dressing goes well with green leafy salads or fruit salads.
