2 8 oz. packages fat-free cream cheese, softened
1 3 oz. package fat-free, sugar-free instant vanilla pudding
1 3 oz. package sugar-free orange gelatin *
2/3 cup nonfat dry milk powder
1 cup unsweetened orange juice
3/4 cup non-fat whipped topping
1 6 oz. shortbread piecrust
1 unpeeled orange, cut into 8 slices
*Could substitute any flavor of gelatin for a different taste. If substituting a different flavor, use unsweetened apple juice or unsweetened pineapple juice.
In a large bowl, stir cream cheese with a spoon until soft and creamy. Add dry pudding mix, dry gelatin, dry milk powder and orange juice. Mix well using a wire whisk. Stir in 1/4 cup of the whipped topping. Spread mixture evenly into piecrust. Refrigerate until set, about 1 to 1½ hour. Spread remaining whipped topping over pie and decorate with orange slices.
