Stovetop Veal Parmesan


1 tablespoon flour
1/2 teaspoon dried basil
4 thin-sliced veal cutlets, 3 ounces each (1/8” thick)
2 cups marinara sauce
3/4 cup shredded part-skim Mozzarella cheese
4 tablespoons Parmesan cheese


Spray large nonstick skillet with nonstick olive oil cooking spray; heat. Combine flour and basil then sprinkle on a sheet of wax paper; lightly dredge the veal in the flour and basil mixture. Transfer veal to the skillet; sauté until golden brown, about 3 minutes; turn over and sauté 1 – 2 minutes longer.

Pour marinara sauce around the veal, reduce heat and simmer, covered until sauce is bubbling and cutlets are cooked through, 3 – 5 minutes. Turn off heat and sprinkle Mozzarella and Parmesan over mixture; cover and let set until cheeses melt.
