TURKEY MEATBALL AND WHITE BEAN SOUP
Ingredients:
1 pound ground turkey
2 tablespoons crushed garlic
1 tablespoon finely chopped parsley
½ cup egg substitute
6 cups beef stock
2 carrots, cleaned and thinly sliced
1 small sweet onion, diced
1 can (15.5 ounces) Great Northern beans or any white bean
2 cups chopped kale
2 teaspoons basil
1 teaspoon oregano
salt and pepper to taste
Directions:
In large bowl, combine the turkey, garlic, parsley and half of the egg substitute. If the mixture is dry, add small amounts of remaining egg substitute until mixture is sticky enough to make balls.
Roll meat mixture into small balls – small enough to scoop onto spoon and eat in one bite.
In large stockpot, combine beef stock, carrots and onion and bring to a boil. Add the meatballs one at a time and reduce heat to simmer. Simmer for 3 minutes. Add remaining ingredients and cook until meatballs are cooked, approximately 5 – 8 minutes.
