White Chili


4 cups chicken broth

4 skinless, boneless chicken breasts, cut into bite-size pieces

2 cans great northern beans, rinsed and drained

2 medium zucchini, diced

2 yellow onions, diced

1 tablespoon cumin

2 teaspoons minced garlic

2 teaspoons chili powder

1 cup frozen corn

8 oz container fat free plain yogurt

salt and pepper to taste



Place broth, chicken pieces, beans, zucchini, onion, corn, cumin, garlic and chili powder in crockpot. Cover and cook on low until chicken is cooked through, approximately 5 to 6 hours.

Stir in plain yogurt and salt and pepper; cook until heated through, about 5 minutes.

Makes: 8 servings
