A bowl of hearty Amish Country Potato Soup topped with greens and bacon

Savor the warmth and flavor of homemade soup

Imagine sitting down to a bowl of warm, creamy, and super cheesy Amish country potato soup! This recipe is like a big hug in a bowl, using simple ingredients like potatoes, veggies, and cheese to make a dish that’s really tasty and comforting.

What’s Inside: We start with Yukon potatoes, celery, carrots, and onions. These veggies make the soup hearty and flavorful. Chicken stock and chicken base are added for extra yumminess and a rich taste.

Making it Creamy and Cheesy: We use milk, sour cream, and flour to make the soup creamy. And for a bit of whimsy and flavor, we add hot pepper cheese and sharp American cheese to make it super cheesy and delicious!

Cool Toppings: The recipe suggests some fun toppings! You can add some corned beef or ham, shredded brussel sprouts, and microgreens. These toppings make the soup even more exciting and tasty!

How to Make Amish Country Potato Soup: We start by cooking onions in butter, then add all the other ingredients one by one, letting them all blend together. The veggies cook until they’re just right, and the cheeses melt to make the soup creamy and dreamy!

Finishing Touch: Don’t forget the fresh parsley and a little drizzle of olive oil and garlic salt on the greens. This makes the soup look pretty and taste even better!

Why We Love It: This cheesy potato soup is great for a cold day or anytime you want something comforting and yummy. You can also change the toppings to make it just the way you like!

*Then, for garnish, finely shred raw brussel sprouts & add some micro greens, but before topping the soup with greens, lightly drizzle greens with olive oil and garlic salt. Then place greens on top and enjoy!
