Amish Breakfast Casserole that is Filling and Full of Flavor

There’s something truly special about starting your day with a hearty, homemade breakfast. And when it comes to comfort food that warms the soul, Amish cuisine never disappoints. Today, I’m excited to share a recipe that has quickly become a favorite in my kitchen – an Amish Breakfast Dish that’s delicious and incredibly easy to make. Amish Breakfast Dish Ingredients:

  • 2 Tbsp Olive Oil
  • 2 Cups Real Bacon Bits
  • 1 Cup Diced Onions
  • 1 Cup Red or Green Peppers, sliced
  • 1 lb. Sausage Links, sliced (or Ham, diced)
  • 6 Eggs
  • 4 Cups Frozen Hashbrowns, thawed
  • 16 oz. MELTZ Cheesy melted (Processed cheese such as Velveeta)
  • 1 1/2 Cups Small Curd Cottage Cheese
  • 1/2 tsp Sea Salt
  • 1/2 tsp Black Pepper
  • 1 tsp Garlic Powder
  • 1 tsp Hot Sauce (optional)
  • 1 1/4 Cup Swiss Cheese (optional)

Directions:

  1. Preheat your oven to 350°F (175°C) and grease a 9×13-inch baking dish.
  2. In a large skillet, heat the olive oil over medium heat. Add the bacon bits, diced onions, sliced peppers, and sausage (or ham). Sauté until the vegetables are tender and the meat is cooked through.
  3. In a large bowl, beat the eggs. Add the thawed hashbrowns, melted MELTZ Cheesy, cottage cheese, sea salt, black pepper, garlic powder, and hot sauce (if using). Mix well to combine.
  4. Stir in the cooked meat and vegetable mixture into the egg mixture until everything is evenly distributed.
  5. Pour the mixture into the prepared baking dish and bake uncovered for 30-35 minutes.
  6. If using Swiss cheese, sprinkle it over the top of the dish and return it to the oven. Bake for an additional 10 minutes or until the cheese is melted and the center of the dish is set.
