As the Super Bowl draws near, excitement and the aroma of my favorite game-day foods buzz in the air. There’s nothing like settling in front of the TV with a spread that scores big on flavor and fun. This year, the spotlight is on the incredible snacks my husband, a culinary wizard, prepares, making our Super Bowl celebration as much about the food as it is about the game.

A parade of mouth-watering dishes emerges from his kitchen, each a perfect blend of taste and excitement. Below, I’ve shared some of our favorite Super Bowl recipes. Prepare to elevate your game-day experience with these crowd-pleasing delights! 

Lemon Pepper Garlic Parmesan Wings – A Healthier Super Bowl Delight

Super Bowl snacks are necessary, but who says they can’t be delicious and a bit healthier? These Lemon Pepper Garlic Parmesan Wings are baked to perfection, offering a healthier alternative to the traditional fried wings without compromising taste. Here’s how to make them:

Ingredients:

  • 5 lbs party wings
  • 1 tablespoon salt
  • 4 cloves minced garlic
  • 1 whole lemon – zested and juiced
  • 1 tablespoon lemon pepper seasoning
  • 1 stick butter
  • ¼ cup + 2 tablespoons olive oil
  • 2-3 oz freshly grated parmesan cheese
  • A handful of fresh chopped parsley (optional)

Instructions:

  • Prepare for Baking:
    • Preheat your oven to 425 degrees.
    • Dry the wings thoroughly with paper towels. This is key to getting them crispy in the oven.
    • Toss the wings in 2 tablespoons of olive oil.
    • Season the wings with salt to your preference.
    • Lay the wings in a single layer on a large baking sheet to ensure even cooking and crispiness.
    • Bake in the preheated oven until they reach your desired level of crispness, usually 45 minutes to an hour, depending on the size of the wings.
    • Halfway through, turn the wings over to ensure they’re crispy on all sides.
    • Baking instead of frying reduces the amount of oil absorbed, making these wings healthier without losing their delightful crunch.
  • Sauce Preparation:
    • While baking the wings, combine butter and the remaining ¼ cup of olive oil in a saucepan over low heat until thoroughly melted.
    • Add minced garlic and cook for 2-3 minutes until fragrant but not browned.
    • Remove from heat and stir in lemon pepper seasoning, most of the grated parmesan (save some for garnishing), and the lemon juice.
    • Let the sauce sit while the wings finish cooking, allowing the flavors to meld.
  • Finishing Touches:
    • Toss the baked wings in the sauce to coat evenly.
    • Place the wings in a large serving bowl.
    • Drizzle the remaining sauce over the top.
    • Garnish the remaining parmesan cheese with lemon zest and, if desired, chopped parsley for a burst of color.

These Lemon Pepper Garlic Parmesan Wings, made healthier by baking them in the oven, are a surefire way to impress your guests this Super Bowl. They’re crispy, flavorful, and a bit easier on the waistline – a win-win for your game-day feast!

Nachos & Queso Rosa: A Super Bowl Fiesta!


Ingredients:

For the Nachos

  • 2 bags corn tortilla chips
  • 1 15 oz can of refried beans
  • 1 15 oz can of black beans
  • 8 oz Fiesta blend shredded cheese
  • 1 lb ground beef
  • 1 envelope of taco seasoning
  • 2 cups iceberg lettuce, shredded
  • Sour cream (optional)
  • Pickled jalapeños (optional)

For the Queso Rosa:

  • 4 tablespoons butter
  • 4 tablespoons all-purpose flour
  • 2 1/4 cups whole milk
  • 16 oz block Monterey Jack cheese, shredded
  • 1 tablespoon cumin
  • Salt, to taste
  • 1 lb sausage, browned and drained
  • 1 can Rotel tomatoes (or diced tomatoes/fire-roasted diced tomatoes for less heat as the Rotel contains green Chile)

Instructions:

  • Preheat Oven & Prepare Beef:
    • Preheat the oven to 400 degrees.
    • Brown the ground beef and prepare it with the taco seasoning per the instructions.
  • Making the Queso:
    • In a medium skillet, melt the butter over medium heat.
    • Add the flour and whisk constantly for 2 minutes to form a roux.
    • Gradually add milk, about 1/4 cup at a time, ensuring each addition is well incorporated.
    • Once all the milk is added, continue whisking until it simmers.
    • Add the shredded Monterey Jack cheese a handful at a time, ensuring it’s fully melted before adding more.
    • Stir in cumin. Adjust salt and cumin to taste. Remove from heat.
  • Assembling the Nachos:
    • Spread the chips evenly on a large baking sheet.
    • Spoon refried beans and black beans over the chips.
    • Drizzle about half of the cheese sauce over the beans.
    • Spread the seasoned ground beef and top with fiesta blend cheese.
    • Bake for approximately 10 minutes, until the cheese is melted and bubbly.
    • Let it cool slightly while you finish the Queso Rosa.
  • Finishing the Queso Rosa:
    • Reheat the remaining cheese sauce on medium heat.
    • Add the browned, drained sausage and the can of Rotel tomatoes.
    • Stir until warm, then remove from heat.
  • Serving:
    • Top the nachos with shredded lettuce, and add jalapeños and sour cream if desired.
    • Serve the warm Queso Rosa with additional tortilla chips.
