One fantastic way to do this is by making Walnut Creek’s Reuben Pull-Apart Bread, a twist on the classic Reuben sandwich that’s perfect for sharing with friends and family. This recipe combines the rich flavors of corned beef, Swiss cheese, Sauerkraut, and Thousand Island dressing, all nestled within a crusty sourdough loaf. It’s an easy-to-make, crowd-pleasing dish that’s sure to be a hit at any St. Patrick’s Day gathering.

Ingredients:

  • 1 Round Sourdough Loaf
  • 1/2 lb. Chipped Corned Beef or Pastrami
  • 8 oz. Baby Swiss Cheese Slices
  • 1 Cup Thousand Island Dressing
  • 1 Cup Sauerkraut

Directions:

  1. Preheat your oven to 375°F (190°C).
  2. Shred the Baby Swiss cheese and cut the corned beef or pastrami into small pieces. Set aside.
  3. Slice the sourdough loaf across every 1 inch, almost to the bottom of the loaf. Then, turn the loaf 90 degrees and repeat the slicing. This creates rows of small square pieces of bread still connected at the bottom of the loaf.
  4. Using a basting brush, generously apply Thousand Island dressing all over the outside and inside of the bread, ensuring it gets into all the cuts.
  5. Stuff the cuts with the shredded cheese and chopped meat, reserving some for the top of the loaf.
  6. Drain any excess liquid from the Sauerkraut and heat it in a small skillet. Then, gently place the Sauerkraut over the top of the meat and cheese on the loaf.
  7. Bake in a preheated oven for 15 minutes or until the cheese has melted and the bread is golden around the edges.
  8. Place the loaf under the broiler for 3-5 minutes for a crispy finish.
  9. Remove from the oven, place on a cutting board, and cut into pieces for easy serving. Serve with extra Thousand Island dressing on the side.
